Chinkiang Vinegar

Black Rice Vinegar From China

Chinkiang vinegar is a black rice vinegar mainly produced and used in southern China. One center of black rice vinegar production is the city of Chinkiang on the Yangtze River, and the city also gave the vinegar its name.

It is brewed from various types of rice and traditionally matured in clay pots. The black vinegar has a stronger and more acidic aroma than lighter rice vinegar. You use it both for cooking and as a dip, for example with jiaozi and dim sum, or to season soups.

You can find Chinkiang vinegar in any Asian supermarket that also carries other Chinese products.
