Choi Sam (菜心), also known in Hong Kong as “Yu Choy” (油菜), is a leafy vegetable from the cruciferous family, which is closely related to Pak Choi and Chinese broccoli, but has larger and thinner leaves and almost no cabbage flavor.

In English-language recipes, Choi Sam is often called “Mustard greens” or “Chinese Mustard,” and can also be found under its alternative name “Yu Choy”. In German-speaking regions, it’s also known as “Choisum”, “Chinese flowering cabbage”, “False Pak Choi”, or occasionally “Chinese mustard”. In Thailand, the vegetable is called “Pak Kwang Tung” ( ผักกวางตุ้ง ).

You can find fresh Choi Sam mostly in Asian supermarkets that specialize in Chinese cuisine.
