Doenjang

Korean Fermented Soybean Paste

Doenjang is a Korean seasoning paste made from fermented soybeans. Literally, the Korean name just means “thick paste”. It is a byproduct of making Korean gukganjang paste (“soup soy sauce”). Compared with other Asian soybean pastes, such as Yellow Bean Paste, Doenjang stands out because of its relatively high salt content.

You can buy it in many supermarkets and, if not, usually in the seasoning aisle of Asian grocery stores.
