Green Thai Curry Paste

You can use this Thai curry paste to prepare green Thai curries, or “Gaeng Khiau Wan” ( ). In Thai it is called “Krueang Gaeng Khiau Wan” ( ) or “Prik Gaeng Khiau Wan” ( ), and very rarely also “Nam Prik Gaeng Khiau Wan” ( ).

Commercially available green curry pastes are generally the spiciest of all Thai curry pastes. The use of kaffir lime zest gives them a slightly bitter-sour note. The paste works best with heartier meats such as beef or pork, which can stand up to its bold flavors.
