What Is Kecap Manis?
Kecap Manis is the Indonesian version of sweet soy sauce. It has a thick, syrupy texture and a flavor that is reminiscent of molasses. Because of its high sugar content, it adds sweetness, gloss and a light caramel note to marinades, glazes and wok dishes alongside salt and umami.
You can find Kecap Manis in most Asian supermarkets that also carry Indonesian products. Depending on the manufacturer, the bottle may also say “Ketjap Manis” or “Kejap Manis”. As a substitute, you can use Thai sweet soy sauce, although it has a slightly different flavor.
