Pea Shoots

Pea shoots are the young shoots of the garden pea or sugar pea (Pisum sativum). In Asian cooking, you usually buy them freshly harvested or soon after cutting. Their flavor is mildly sweet and reminds you of young peas with a slightly grassy note.

In English, they are usually called “Pea Sprouts”, “Pea Shoots” or “Oriental Pea Shoots”. In Chinese cooking, they are known as . In Thailand, they are called and in Vietnam .

You can find fresh pea shoots in well-stocked Asian supermarkets, usually in the refrigerated section.
