Shiitake Mushrooms (椎茸)

Po-Ku (冬菇), Hed Hom (เห็ดหอม)

Shiitake is a very flavorful Asian mushroom that grows naturally in the forests of China and Japan. The Japanese name “Shiitake” (椎茸) is probably much more familiar here than the Chinese name “Po-Ku” (冬菇). This mushroom is also widely used in other Asian countries, including Thailand, where it is called “Hed Hom” ( ).

Fresh Shiitake

Fresh shiitake mushrooms are now appearing more and more often in well-stocked supermarkets and at weekly markets.

Usage

Dried Shiitake

In Asian supermarkets, shiitake is usually sold dried, as shown in the title image. Before using it, you need to soak it in lukewarm water for 20 to 30 minutes. I often use the soaking liquid afterwards for seasoning as well, even though some people believe that you should never do that.

Canned Shiitake

Shiitake mushrooms are also available canned in Asian supermarkets, often under their Chinese name “Po-Ku”.
