The wild-growing turmeric species Curcuma sessilis is known as “Thai Tulip” or “Siam Tulip”, and its young edible flower shoots are called or in Thailand.

The shoots and flower stalks are harvested mainly in Central Thailand and the Isan region before they unfold completely. They taste mild and slightly tart with a subtle ginger and turmeric note and stay pleasantly crisp even after cooking.

The name “Thai Tulip” or “Siam Tulip” is also used in stores for the ornamental plant Curcuma alismatifolia, which is sold as a cut flower and is not edible. So when shopping, make sure you pick up the young flower shoots for cooking and not a bouquet.
