Udon Noodles (饂飩)
Thick Japanese Wheat Noodles
Udon noodles (饂飩 or うどん) are the thickest noodles in Japanese cuisine. They have a soft, almost elastic texture and are made from wheat flour. You can buy udon noodles in pre-cooked or dried form in Asian supermarkets.
Most udon noodles you get in Asian supermarkets here, however, come from China or Korea; original Japanese udon noodles are rather rare. You can find them in shops that specialize in Japanese cuisine or in stores with a larger Japanese food section.
