This paste is made from fermented yellow soybeans. It is also known as “Brown Bean Paste” or simply “Soybean Paste” and is used as a seasoning in many East and Southeast Asian dishes.

In China it is called “Huángdòu Jiàng” (黃豆醬) or shortened to “Huáng Jiàng” (豆醬), in Vietnam it is known as “Nuoc Tuong” and in Thailand as Tao Jiaw ( เต้าเจี้ยว ).

While Chinese bean pastes develop a pronounced sweet note through fermentation, pastes from other countries tend to be more on the salty side. Particularly salty and not sweet at all is the Doenjang Paste from Korea, which is also made differently.
