Korean Gamjachae Bokkeum
Stir-Fried Potato Sticks as a Side Dish
A while ago I made super spicy Korean Buldak chicken wings. I was looking for a matching Korean side dish, or Banchan as they are called in Korea. I still had
two potatoes in the house and that is how I came up with “Gamjachae Bokkeum” (
The dish is not spicy and is ready in a few minutes. The only laborious part is the cutting, because the potatoes have to be cut into really fine sticks. I used
my Thai
Ingredients for 2-3 servings
- 2 medium potatoes
- one spring onion
- one garlic clove
- 2 tbsp vegetable oil
- 1 tsp sesame oil
- ½ tsp salt
- ½ tsp pepper
- 1 tsp white sesame seeds
Preparation
Prep
- First peel the potatoes
- Cut the white part of the spring onion into long strips and the green part into fine rings
- Peel the garlic and chop it very finely
- Slice the potatoes into fine sticks
- Put the potato sticks into cold water for five minutes so that starch is washed out
- Take the potatoes out of the water and rinse them briefly under cold water
Cooking
- Heat the pan on a high setting and add the vegetable oil
- Once the oil is hot, fry the white part of the spring onion for one minute until it turns translucent
- Now add the potato sticks and the garlic and fry them for two minutes while stirring
- Reduce the heat a little and cook for three minutes with the lid closed. The sticks should turn soft but keep some bite
- Then add the sesame oil, the salt and the pepper and mix everything well again
- Transfer to a bowl and sprinkle the green spring onion rings and the sesame seeds on top
- Serve the finished Gamjachae Bokkeum warm or lukewarm as a side dish
