Pad Mama Moo: Instant Noodles with Pork
Thai stir-fried ramen-style noodles
When I really need something quick, I like to use Thai instant noodles from the
Ingredients for two servings
- 2 packages Mama instant noodles
- 200g pork, thinly sliced
- 2 eggs
- 2 cloves garlic
- 2 spring onions
- 1 carrot
- 2 tbsp light soy sauce
- 1 tbsp oyster sauce
- 1 tsp palm sugar or brown sugar
- 3 tbsp vegetable oil
Instructions
First cook the instant noodles according to package instructions, but only use about 2/3 of the specified time, as they will be cooked further in the wok later. Then drain the noodles and set aside. We don’t need the seasoning powder from the noodle packages.
Now peel and finely chop the garlic. Then cut the spring onions into rings, separating the white parts from the green parts. Finally, peel the carrot and cut it into thin strips.
Next, mix the light soy sauce with the oyster sauce and completely dissolve the palm sugar by stirring. Keep this sauce mixture ready for later.
As the next step, heat the oil in a wok or deep pan over high heat. Crack the two eggs into it and scramble them. Remove the cooked eggs, cut into thin strips, and set aside.
In the same wok, stir-fry the pork together with the garlic until the meat is cooked. Then add the white parts of the spring onions and the carrot and briefly stir-fry them as well.
Then add the pre-cooked noodles and the eggs and season everything with the prepared sauce mixture. Mix everything well and stir-fry together for two to three minutes.
Garnish the finished Pad Mama Moo with the green rings of the spring onions and serve immediately.
