Thai Minced Meat with Stink Beans

Sator beans, which are also called stink beans, are not for everyone, which I can understand well, because the taste is quite special. But I like them and so I was very happy when I recently found a bowl in my trusted Asian shop again. This time I stir-fried them with minced pork in red curry paste and then let everything simmer. Here is my recipe for a Thai “Pad Phed Moo Sap Sator” (ผัดเผ็ดหมูสับสะตอ).

Ingredients for 1-2 servings

  • 300g (10.6 oz) minced pork
  • 100g (3.5 oz) sator beans
  • 2 tbsp red curry paste
  • one clove garlic
  • one shallot
  • 3 fresh Thai chilis
  • 2 tbsp fish sauce
  • 2 tbsp light soy sauce
  • 80ml water
  • 2 kaffir lime leaves
  • one egg per person (optional)
  • 2-3 tbsp vegetable oil

Preparation

Since the preparation of Pad Phed Moo Sap Sator itself is very quick, we first prepare all the ingredients. For this, peel the shallot and garlic clove and cut them into fine rings. Then cut the Thai chilis into fine rings. Then wash the sator beans thoroughly. Finally, mix the soy sauce and fish sauce with the water in a glass or cup.

Next, heat the vegetable oil in a wok or large pan and stir-fry the curry paste until it smells fragrant but has not yet burned. Then add the minced meat and stir-fry both together until the minced meat has changed color.

Now add the shallot, garlic and Thai chilis, mix everything well and continue stir-frying until the shallot has become translucent. Then add the sator beans, mix with the rest and also stir-fry these briefly. Then deglaze everything with the sauce-water mixture, then reduce the heat and let everything simmer for six to eight minutes until the beans are soft.

In the meantime, if desired, one fried egg per person can be prepared in a second pan with plenty of oil. Furthermore, the lime leaves should be folded in the middle and then the stem carefully pulled out. The remaining leaf halves can then be cut very easily into thin strips.

As soon as the sator beans are soft but still have bite, the Pad Phed Moo Sap Sator is ready. Now sprinkle the strips of lime leaves over it and mix everything well again. The finished dish can now be served. For this, distribute the portions on plates and garnish each with a fried egg.
